Winemaker Dinner Party at Tiki’s Grill and Bar

Tiki’s Grill & Bar is proud to have Jesse Katz from Roth & Lancaster Wines Monday March 10th, 2014 6:00 PM til 8:30 PM. It will feature a variety of his wines as well as some island flavor to go along with them. I got together with Master Sommelier Patrick Okubo of Young’s Market Company of Hawaii, Michael Miller, and Teresa Miller and we have put together a 5 course meal of delectable items we believe pair well with the wines being served.

We’re going to start off with amuse-bouche style. We will be serving the Roth Sauv Blanc 2011 and will pair it with a slow braised & grilled hawaiian octopus. It will be locally caught by one of our own Tiki’s family and served with kahuku sea asparagus, kukui nuts, and big island finger limes for some added texture.
The first course will be the Roth Chardonnay 2011 paired with a confit of island opah. It will be served with local fennel and hamakua mushroom oyster cream. Following will be the Roth Pinot Noir 2011 paired with a sous vide duck twosome. It will come with a confit of duck hash baklava, smoked gouda, and caramelized kula onions. The third course will be the Roth Cabernet 2010 paired with olive oil poached kulana beef tenderloin. It will be served with a chocolate and aubergine agrodolce. Aubergine is eggplant and agrodolce is an Italian term for a sweet and sour sauce made with vinegar and sugar. I think it will blend exceptionally well. The fourth course will be the Lancaster Cabernet paired with Colorado lamb rack chop. I’m serving it with blue polenta, wilted tatsoi, and Big Island jabuticaba mostarda. Tatsoi is in the greens family and is spinach like. We will be getting the jabuticaba, which is a fruit that grows on the trunk of a tree and has the likeness of rambutan or lychee, from another family member of Tiki’s who’s family has a farm on the Big Island.
For the dessert we will have the Lancaster Cabernet again, but this time pairing it with burrata. Burrata is a fresh Italian cheese made from mozzarella and ricotta. It will be served with Big Island mangosteen, nalo honey, basil, and roasted grapes.
 
Winemaker Jesse Katz will be hosting the dinner party and speaking about his passion of wine making.  After honing his craft in Napa and Argentina, Jesse was recruited from cult producer Screaming Eagle.
Then Katz was the youngest hired head winemaker in the U.S. when he started at Lancaster Estate and Roth. In the past four years, he received 90+ scores on every Lancaster wine scored by Robert Parker.
 
The dinner runs $75 per person and includes dinner, wine, tax & tip. Seating for this event is extremely limited and will be sold out very soon. No tickets will be available at the door. Tickets are non-refundable,
but may be transferred.

A less known fact is that a custom-made wine for actress Jessica Biel and singer/actor Justin Timberlake, was served and gifted to guests who attended their wedding; made by longtime friend and snowboarding buddy Jesse Katz.
