The complexity of food can also be the simplicity of food. When an artist draws on his canvas, he or she is creating something, something that grows with every stroke of the brush and every twist of the wrist. A chef also has a canvas in the form of an empty plate and his imagination and thoughtful ingredients are his brush to create extremely colorful and delicious dishes.

Summer is a hot one and what better way to stay cool than fresh cold watermelon but with a twist. Mine was meshing watermelon with arugula, feta cheese, Hawaiian salt, Mint pesto, house made harissa and some balsamic vinegar.

Be yourself, break away from the typical cuisine of authentic local food and don’t be afraid to experience the absolutely delicious merge of fruit and vegetables, guaranteed to stimulate the taste buds to a different dimension! Challenge yourself to experience a watermelon in different ways.

Watermelon & Feta Cheese Salad
A delicious Watermelon Salad!

Ingredients
  1. • 6oz. watermelon slab (6”x1/2”x3”)
  2. • ½ cup micro Nalo arugula
  3. • 1oz. Naked cow feta cheese
  4. • Hawaiian salt as needed
  5. • 1T balsamic vinegar
  6. • 1T Mint pesto (see recipe)
  7. • 1T harissa (see recipe)
  8. MINT PESTO
  9. •EVOO 1 cup
  10. •Garlic clove smashed 2pc
  11. •Basil 15 leaves
  12. •Mint 25 leaves
  13. •Mac-nuts 1T
  14. •Parm cheese 1T
  15. •Kalamata olives (Chopped by hand) 2T
  16. •Salt and pepper TT
  17. HARISSA SAUCE
  18. •OLIVE OIL 1C
  19. •RED BELL PEPPERS (SEEDED) 2
  20. •GARLIC CLOVES, WHOLE 6 pcs
  21. •RED ONION ROUGH CUT 1 EA
  22. •THAI CHILES (STEM REMOVED) 20 pcs
  23. •TOMATO PASTE 1small can
  24. •CUMIN 1tblsp
  25. •CORIANDER SEEDS 1tblsp
  26. •CARAWAY SEEDS 1tblsp
  27. •MINT LEAVES 1 cup lose packed
  28. •CILANTRO LEAVES 1 cup lose packed
  29. •LEMON JUICE ½ Cup
  30. •SALT TT
Instructions
  1. For MINT PESTO
  2.  Muddle everything but the olives
  3.  Mix in the olives
  4.  Add salt and pepper to taste;
  5. FOR HARISSA SAUCE
  6. Cook bell peppers, onion, thai peppers & garlic in olive oil until lightly caramelized.
  7. Add tomato paste and dry herbs and cook lightly.
  8. Remove from heat and add mint, cilantro, lemon juice & salt.
  9. Blend in vitamix until smooth and adjust salt to taste
  10. SETTING THE SALAD
  11. Set Watermelon on plate
  12. Slide some Harissa Sauce on side of Watermelon
  13. Cover Watermelon with Mint Pesto.
  14. Drizzle Balsamic Vinegar
  15. Top with Arugula
  16. Sprinkle Feta Cheese
  17. Salt & Pepper to taste
