The Palama Settlement 808 Junior Chef Team Visits Tiki’s July is National Culinary Arts Month. In honor of this, I wanted to share two experiences that are close to my heart - both involve working with local youth who are interested in breaking into the field of culinary arts. It's so important to light a fire under these kids who will become the next generation of pioneers and pirates in the kitchen, and who can keep our Hawaii Regional Cuisine movement alive, while challenging it and making it better. Their First Real Restaurant It was a revelation. The email had come from Larry Sweets, the youth recreation specialist at the Palama Settlement in Kalihi. He wrote to thank us for dinner and offer to have some of the kids from Palama’s fire knife dancing and hula programs perform at Tiki’s. Invited to cook and teach for a Tahitian Cruise

I’m very excited to invite all the cruise fans, Pacific Rim Cuisine connoisseurs and French Polynesia lovers to a very special event. On Monday, October 20 we’ll be hosting a special cruise night at Tiki’s Grill and Bar from 5:30-7:00 pm along with representatives from Ultimate Vacations. We’ll be providing some light pupus and cocktails and I’ll be on hand to talk about the classes that I’m putting together for the 2015 Hale 'Aina Awards Cruise. Ultimate Vacations approached me about being part of this cruise based on Tiki’s consistently being voted by Honolulu Magazine readers as the best restaurant in Waikiki to bring out-of-town guests and as a top pick for great seafood. This is my third stint as the executive chef of a Hale 'Aina award winning restaurant so I feel comfortable I have the background and knowledge to really add something to the experience for the guests that will be joining us on this cruise. 2014 TripAdvisor Award of Excellence – Winning With Social Media

I would like to thank my team for everything they do to help us make Tiki’s a great experience for our guests. We were recently honored with the TripAdvisor 2014 Award of Excellence thanks to everyone’s hard work. This marks the third year in a row that we’ve received the award. A lot goes in to making a large, busy restaurant like Tiki’s a success and social media sites like Yelp, OpenTable, Urbanspoon and TripAdvisor have added another dimension. There are good and bad things, I think, about online reviews but our whole team, from the floor managers and the front of the house staff to the kitchen and the owners have contributed to how well we’ve done. Earning consistently high ratings, good reviews and awards like this one really shows what a strong team we have. The Good TripAdvisor is a pretty powerful social media network for travelers and obviously in Waikiki we are a travel destination. Our clientele is maybe 20% local and 80% visitors.
